Schiacciare le melanzane con una forchetta e frullare il composto. Lasciare freddare le melanzane quindi aggiungere le patate, 1 uova intero, sale, Parmigiano Reggiano e mescolare tutto bene per amalgamare. Preparare le crocchette delle dimensioni volute e passarle nella farina, nell'uovo sbattuto e infine nel pangrattato. Friggere le crocchette in abbondante olio quindi metterle su carta assorbente per asciugarle dall'olio in eccesso. Svuotarli della polpa con uno scavino sferico in modo da ricavare delle palline di melone. Ripetere il procedimento con la polpa dell'anguria e dei kiwi. Tagliare a tocchetti la mela e riunire tutta la frutta in un recipiente, lasciando da parte 2 cucchiai di ribes e mirtilli per la decorazione. Aggiungere lo zucchero a velo e il succo del limone, poi lasciar riposare in frigorifero. Nel frattempo incidere le calotte di melone con un coltello affilato stondando i bordi. Sbucciare l'aglio privandolo dell'eventuale germoglio e tritarlo insieme al peperoncino: fateli imbiondire in metà dell'olio. Scolare gli spaghetti al dente e conditeli con la salsa molto calda. Salare e tuffare le orecchiette nella pentola e dopo qualche minuto aggiungerci le cime di rapa lavate e tagliate a pezzetti. Nel frattempo mettere in una padella l'olio, l'aglio tritato e i filetti di acciuga spezzettati. Far cuocere a fuoco moderato finchè l'acciuga si sciolga completamente. Una volta cotte le orecchiette, scolatele e buttatele nella padella affinchè si amalghimino bene i sapori.
